PERBANDINGAN DAMPAK LAKTOSA DAN MINERAL TERHADAP BERAT JENIS SUSU SAPI DAN KAMBING DI KABUPATEN BANYUMAS

Abstract


Banyumas merupakan wilayah yang berpotensi sebagai penghasil susu karena memiliki populasi ternak sapi dan kambing perah. Perbandingan dampak laktosa (L) dan mineral (M) dari kedua jenis ternak terhadap berat jenis (BJ) susu belum dipahami betul. Hal ini perlu dilakukan karena berkaitan dengan kualitas dan harga susu. Tujuan penelitian ini yakni mengkaji dampak laktosa dan mineral terhadap berat jenis susu dari sapi dan kambing perah di Kabupaten Banyumas. Ternak sapi sebanyak 50 ekor dan kambing sebanyak 30 ekor diambil sampel susu kemudian dianalisis komponen laktosa, mineral dan berat jenis menggunakan Lactoscan. Data yang diperoleh kemudian dilakukan uji beda Mann-Whitney antara dua jenis ternak dalam tiap komponen susu. Analisis regresi linier berganda dilakukan pula antara laktosa dan mineral terhadap berat jenis susu sebagai variabel terikat dari tiap jenis ternak menggunakan aplikasi XLSTAT 2014. Hasil yang diperoleh yakni terdapat perbedaan antara kualitas susu sapi dan kambing, diantaranya laktosa (4,67±0,24 vs. 3,67±0,71%; p<0,01) dan BJ (1,02923±0,00133 vs. 1,03199±0,00839g/ml; p=0,013), namun tidak berbeda nyata pada mineral (0,69±0,03 vs. 0,73±0,19%; p=0,24). Regresi yang diperoleh yakni BJ=2,919-5,821(L)+77,140(M) (R2=0,658) pada sapi dan BJ=-5,337+3,368(L)+34,368(M) (R2=0,982) pada kambing. Simpulan yang ditarik yakni mineral lebih berpengaruh terhadap BJ dibanding laktosa dan kuantitasnya sama antara sapi dan kambing di Banyumas.

Banyumas is a potential milk producing area because it has a population of dairy cattle and goats. The comparisons of the effect of lactose (L) and minerals (M) of the two types of livestock on milk density (BJ) were not yet fully understood. This need to be done because related to the quality and price of milk. The purpose of this study is to examine the effects of lactose and minerals on the density of milk from dairy cows and goats in Banyumas Regency. Fifty cows and 30 goats milk samples were taken and then analyzed the components of lactose, minerals and density by Lactoscan. Then, the obtained were analized using Mann-Whitney test, between the two types of livestock in each component of milk. Multiple linear regression analyses were also performed between lactose and minerals on milk density as the dependent variable of each type of livestock using the XLSTAT 2014 application. The results obtained were, there are differences between the quality of cow and goat milk, such as lactose (4.67±0.24 vs. 3.67±0.71%; p<0.01) and BJ (1.02923±0.00133 vs. 1.03199±0.00839g/ml; p=0.013), but not significantly different in minerals ( 0.69±0.03 vs. 0.73±0.19%; p=0.24). Regression obtained were BJ = 2,919-5.821(L)+77.140(M) (R2=0.658) in cattle and BJ= -5.337+3.368(L)+34,368(M) (R2= 0.982) in goats. The conclusion is minerals have more effect on BJ than lactose and the quantity was identic between cattle and goats in Banyumas.
